It’s a Conspiracy! Chocolate Friday

I first heart of the the Chocolate Conspiracy in my introductory chocolate classes. However, it was not until several months later that I met the mastermind of this delicious goody- he is awesome.

Pay attention kids, this is another one of my favorites.

First, let me tell you that this is a very unique chocolate that deserves some attention. The Chocolate Conspiracy is raw chocolate. Basically this means that in contrst to other chocolates, the beans are not roasted. The difference as far as I understand is that the heat of roasting can change the nutrients and taste of the cacao bean. After that they are processed in a similar fashion.

Second let me tell you that I have tasted other raw chocolate and AJ, the creator of the Chocolate Conspiracy is definitely on to something good here. His products are awesome.

Let’s not waste and time and get started! Here is your first ‘virtual’ taste of the Blackberry Ginger Bar, the Wild Ninja.

Upon tearing open the wrapper… or maybe you carefully open it. :) Indulge in the intense aroma of chocolate mixed with a ‘twang’. If you peeked at the package, you might recognize this ‘twang’ is a result of the balsamic vinegar infused with blackberries. The blackberries are the perfect touch as they provide the balance between the intense flavors of cacao and vinegar.

The bar

The bar is a darker brown, with a perfect smooth finish. Here AJ has essentially put his chocolate bar mission statement right here for you to check out. I like it.

Breaking off a piece reveals a medium crisp snap. Don’t forget as you place the chocolate in your mouth to just let it melt away, don’t rush it by chewing. Enjoy. Delight. Repeat. The flavor again is just as the aroma, a perfect balance of everything. The first taste of the bar is a strong but sweet cacao flavor. The twang of the vinegar increases some, but only to a perfect equinox of joy.

Real

The texture of the bar upon taste is smooth. It is not what I would call creamy, but the taste is so full that it does not matter. There is just a slight, very small hint of chocolate particles as it dissolves in your mouth, not complete smoothness. However, it is definitely nothing that detracts from the experience.

Proper or not, I say “yum!”

In case you are wondering, like I was- here is the reason given on the website why they call it “The Chocolate Conspiracy”.

A desire for healthy chocolate, and a need to satisfy a particular set of taste buds, set us on the path to creating (and in our opinion succeeding!) the healthiest and most ambrosial chocolate possible.

    The blackberry balsamic chocolate combination sounds amazing. It is always fun to hear about the different chocolate creaters like this one. I come away with a greater appreciation of the particular chocolate you’re reviewing … :)
